Produced by Nehemias and Omar Pimentel, the coffee cherries undergo 55 hours of fermentation in tanks, followed by a washing and defect removal process. They are then sun-dried on patios for 12 hours and subsequently moved to higher piles for 20 days of drying. This meticulous process which includes controlled temperature and pH during anaerobic fermentation, results in beautifully balanced cup.
